The brewing and dairy industry unite around beer and cheese pairings at FoodTech

Through the World of Beer concept, FoodTech brings together breweries, technology suppliers, experts and other stakeholders from across the food industry. Among the highlights, visitors can look forward to discovering how carefully selected pairings can elevate both beer and cheese to entirely new levels. FoodTech takes place at MCH Messecenter Herning from 27–29 October 2026.

Knowledge sharing and inspiration are key elements as FoodTech gathers the Danish brewing industry for World of Beer, which also embraces the dairy sector through a combined beer and cheese tasting experience. The tasting is part of the World of Beer masterclass, developed in close collaboration with Master Brewer and MSc Anders Kissmeyer.

“We will present some of Denmark’s finest cheeses alongside carefully selected beers from Danish breweries. Participants can either join the full tasting session, where experts guide them through the pairings and explain the idea behind, or experience selected combinations in a more informal setting. Our goal is to demonstrate how the right pairings can elevate both beer and cheese to a level, many people have never experienced before,” says Anders Kissmeyer, who continues:

“Beer and cheese offer an enormous range of flavours and expressions, which is precisely what makes them so exciting to work with. The bitterness, sweetness, alcohol content and carbonation of beer interact in fascinating ways with the richness, saltiness and matured notes of cheese, creating truly distinctive taste experiences. I am particularly looking forward to giving visitors those moments when a pairing surprise them and suddenly makes both products appear even better.”

Significant Potential

Among the contributors to the tasting experience is Thise Dairy, which likewise highlights the exceptional flavour experiences that await when carefully selected beers meet award-winning cheeses.

“We have worked systematically to identify the combinations where cheese and beer enhance one another, creating a truly harmonious tasting experience. At the same time, participants will embark on a journey through Danish cheese culture, exploring a wide selection of cheeses from different regions and traditions,” explains Ib Nørgaard Bentley Madsen, Cheese Specialist at Thise Dairy. He also comments on beer’s growing role as a companion to cheese and the evolving relationship between the dairy and brewing industries:

“Many people still associate cheese primarily with wine, but developments within the Danish brewing industry have made beer an equally exciting accompaniment. Cheese contributes richness, saltiness and complex flavour notes, while beer adds bitterness, body and character. Together, they can create truly outstanding taste experiences. In fact, I believe we will see much greater collaboration between the dairy and brewing industries in the future because the potential is so significant.”

Valuable Connections

In addition to the masterclass, World of Beer will feature Specialist Tours, where independent brewing consultant Axel G. Kristiansen of Kristiansen Brewing Consult will guide participants on tours of selected exhibitors.

“These tours provide participants with a unique opportunity to experience the latest technologies and solutions for the brewing industry first-hand. We visit exhibitors showcasing their newest innovations and sharing knowledge that can be directly applied to both operations and business development. At the same time, participants gain valuable access to industry experts and suppliers. It is an efficient way to stay informed about industry developments while strengthening professional networks,” says Axel G. Kristiansen.

The FoodTech team is, among other things, looking forward to showcasing, how the right pairings can elevate both beer and cheese to new heights. The team is also pleased that highly qualified experts will provide visitors with insights ranging from flavour profiles to the latest technological developments.

“World of Beer brings together people, companies and experts, who help to shape the future of the brewing industry. At FoodTech, visitors will have the opportunity to experience the latest technologies, gain inspiration from leading industry professionals and expand their networks. At the same time, we are highlighting new collaborations and trends—including the connection between beer and cheese—that demonstrate how innovation can create value across the food industry,” says Jacob Rasmussen, Project Manager, FoodTech.
