Beer, cheese and technology - new concept launches at FoodTech

World of Beer is the name of FoodTech's new beer concept, which focuses on both new technological solutions and the link between beer and cheese. World of Beer will premiere at the upcoming edition of FoodTech, the destination for the food technology of the future, taking place from 1-3 October 2024 at MCH Messecenter Herning.

FoodTech will zoom in on all aspects of beer and brewing in early October when the trade fair launches World of Beer with a Masterclass and two Specialist Tours on the subject. The former focuses on the promising combination of beer and cheese, while the latter covers the latest technological advances relevant to the beer industry.

The Danish Brewers' Guild is very excited about the new concept, which according to the association closes a significant gap in the Danish beer landscape.

Bringing breweries and suppliers of technical solutions together in one place is new in Denmark, but it makes perfect sense because we are good at beer in this country - both historically and currently. Denmark is one of the world's most exciting beer destinations, and we are strong in terms of both flavour and equipment, which makes it obvious that FoodTech with World of Beer unites the two worlds with a progressive and unifying meeting place, says Michael Knoth, Chairman of the Danish Brewers' Guild, who believes that it is very important for brewers and brewmasters that the new FoodTech initiative focuses on beer:

- Breweries are dependent on raw materials, materials and not least knowledge from the supporting industry, so they can really benefit from this. A central aspect of the Danish Brewers' Guild is education, training and knowledge sharing, which is why we are committed to supporting World of Beer.

The Danish Brewers' Guild has contributed with sparring and idea development, as well as making its network available - and expectations for the first round of World of Beer are high.

- I hope that many of our members will attend World of Beer, be inspired and continue the good work and improve their skills at home afterwards. World of Beer is a much-needed Danish counterpart to the major German trade fairs, and the project has great potential - also in terms of involving the other Nordic countries in the long term, says Michael Knoth.


Specialist Tours: Customised experience for breweries
World of Beer features two Specialist Tours focusing on process optimisation and quality control, respectively. On the tours, brewmasters, technicians, engineers, maintenance staff and quality managers can enjoy a customised brewery experience that gives participants insight and inspiration for their own operations. The tours are also a great opportunity to network with exhibitors, experts, researchers and other industry professionals.

The tours are led by Axel G. Kristiansen, independent brewing consultant at Kristiansen Brewing Consult, and he finds them particularly relevant to FoodTech's focus on the brewing of beer.

- The Danish beer industry has several new players in areas such as measuring equipment and ERP, and World of Beer helps to create an overview of all of them. Participants in the tours can look forward to meeting a number of selected exhibitors who are prepared to meet with representatives from the breweries and who can therefore provide specific advice, says Axel G. Kristiansen, and adds a few more words as to what's in store at FoodTech's Specialist Tours:

- We dive into topics related to process optimisation and quality control, and in general, new technological advances are happening fast at the moment - for example, radical breakthroughs in heating, cooling and water consumption, and the SDG agenda and new, advanced measurement equipment provide breweries with opportunities for raw material and process optimisation.


Masterclass: Celebrating the craft behind beer and cheese
In addition to the two Specialist Tours, World of Beer also offers a Masterclass that explores the connection between beer and cheese. Head brewers from Ebeltoft Gårdbryggeri, Fanø Bryghus and Carlsberg/Jacobsen, as well as Nikolaj Kissmeyer, sous chef at Restaurant Palægade, will present a range of products and show how beer and cheese go together. The masterclass, which is a celebration of the craft, is aimed at brewmasters and production managers as well as people in sales, research and development.

The Masterclass has been created in collaboration with the Danish Dairy Board, which already has a strong presence at FoodTech through the IFC International Food Contest, among other things - and according to Rasmus Holmgård, gastronomy consultant at the Danish Dairy Board and also a participant in the Masterclass, there are great prospects in the combination of beer and cheese.

- Beer and cheese go well together and are a classic combination in Danish food culture for many reasons. Danish dairies have come a long way when it comes to creating innovative and extremely tasty quality products. The revolution that our cheese culture has undergone over the past 20 years has opened up a whole new universe of exciting flavour combinations, Rasmus Holmgård says and continues:

- One of the things we want to show with the Masterclass is that it doesn't have to be difficult to find a beer that pairs perfectly with cheese, and that there is as much complexity and gastronomic quality in pairing beer with cheese as there is in pairing cheese with wine. It's time to get rid of the idea that it's more sophisticated or correct to serve wine with cheese - there's a huge untapped experiential potential in pairing cheese from the local dairy with beer from the local brewery.

He also points out that it is of great value for Danish dairies to work together with breweries to establish in the minds of consumers that cheese is an ideal accompaniment to beer.

Brewer and entrepreneur Anders Kissmeyer has also been instrumental in shaping the Masterclass, acting as a facilitator and close sparring partner from the initial contact with the breweries to the selection of beers and cheeses and the actual planning of the programme. On the day, Anders Kissmeyer will be the moderator and coordinator and will give a presentation with general observations on beer and food pairing.

World of Beer, organised in collaboration with the Danish Dairy Board and the Danish Brewers' Guild, will be held as part of FoodTech, which takes place from 1-3 October 2024 at MCH Messecenter Herning.
