Water is an essential resource in the production of enzymes and in many regions water is becoming increasingly scarce. Reuse and recycling of water may be cost-efficient solutions to make sure that the water resources are managed in balance with the local conditions. However, when implementing water recycling projects with product contact in enzyme production for food and feed several challenges need considered including, food safety, certifications, costumer relations, regulations, technology implementation and operation, and handling of concentrated waste stream. Novonesis will present two cases where reuse and recycling of water has been implemented in enzyme production, one case from Denmark and one case from USA. Combined the cases will allow Novonesis to reduce ground water intake with 1.000.000 m3 per year. The projects demonstrate that re-cycle of water and wastewater is technical feasible and can be a cost-efficient way to decouple water consumption to economic growth.

In food production the need for cooling down and heating up the product is always present and the necessary supply systems always have a water consumption attached to them. Optimizing on the amount of energy we use therefore is often associated with a saving on water and vice versa. This is why heat pumps are ideal to replace low to medium grade heat distribution in an energy efficient way by utilizing the waste heat generated in production, while also reducing the amount of water used in the systems it replaces. This technology has very big potential, but also presents some design challenge that we need to take in to account, to make sure we have a balance between our cooling and heating needs. NIRAS has experience in heat pump system and when/where it makes sense to implement them in your production facilities, and will talk you through the pros and cons.

Industry is a large consumer of water and energy, with > 22 % of the total global water withdrawals being used for industrial purposes1. Water is one of the most important ingredients in food manufacturing and has become a high-cost resource with progressive constraints on supply and discharge. Often water treatment systems are not running at the most optimized setting which results in water loss and high energy use. While this problem is global – the solutions are highly local, giving rise to the opportunities for food and beverage industries to lower their water and energy consumption, while optimizing their water treatment systems. This talk will present a case story and highlight the benefits of optimizing water treatment application with a holistic approach with focus on both water AND energy savings. This also helps food and beverage industries gain overview of their water and energy usage while accomplishing their sustainability goals.

Reusing water makes good sense for the environmental footprint of the food industry. Current EU food hygiene legislation requires the use of potable water in food processing, however, there are legal options for use of different types of water including water reclaimed from food and spent potable water. In this context, it is essential to demonstrate that treated process water can be used without affecting the safety of the final food products. For this purpose, the framework of a formal risk assessment is suggested to guide the design of the water treatment and document control with all identified microbiological, chemical, and physical hazards. This presentation will share some of the steps and considerations taken in concrete industrial water reuse projects.

Waterleau is a global provider of circular water use in dairy manufacturing, potato processing and brewery industry. These industries can increase the water and energy efficiency by recovering process water and biogas from wastewater. Cases studies from all three sectors will prove the numbers that can be reached in practice: a brewery aiming for 1,2 hl/hl beer, a drinking yoghurt producer to 1 m³/ton product and a potato processor recovering 5 MW thermal energy. As a perspective for the future, the zero liquid discharge (ZLD) and even water positive goals will be explained. These goals will be mirrored to the challenges of specific constraints at the factory site level.

Danish Crown has been working ambitiously With sustainability targets for many years. In 2021 a strategy for climate emissions was published, with a focus on investing in new technology, sustainability and innovation to reduce the carbon footprint of meat and supply more sustainable food and products that meet consumer demand. In 2024, Danish Crown will be airing a new approach for water consumption. What have been the drivers behind the new approach, and how can a positive process with stakeholder involvement be laid out? Who are the main internal and external stakeholders, and how are they involved? What are the main differences between developing climate and water strategies? The Danish Crown Group produces a large variety of food products, ranging from fresh pork and beef cuts, over sausages, to ready to eat meals and soups. The underlying water consuming processes are therefore also very variable, and water saving targets must be set to be both ambitious and realistic. The speak will provide insights into the decision-making and roll-out processes of water approach in a large international company aimed at advancing the sustainability impact of a food company

The new CSRD and the emerging European Sustainability Reporting Standards (ESRS) requirements take sustainability reporting to a new level. The long-term goal is segregating companies between good and less good performers and ensure stakeholders get adequate information for decision making. Former reporting frameworks had a focus on business risks and opportunities, but the impacts are the center piece in the new directive. A number is only a number if you don’t know what lies behind. The devil is in the detail and validity depends on the processes creating the report as well as assumptions, methodology, criteria, and other parameters. The speakers will in the presentation touch upon what lies behind a trustworthy report and share insights and experience from the view of a certifying body.

4 years ago, Arla Foods Ingredients (AFI) started designing a new wastewater recycling system that we called technical water. We would like to share our journey of challenges and opportunities connected to technical water, as we have been through a steep learning curve to understand the technology and the operational risk factors of the equipment. The technical water project opened up to new possible applications (e.g. broader end-users), which we are working on right now. However, this successful journey was not without “bumps in the road”, and this gave us the opportunity to learn and optimize the technology to deal with unforeseen issues. Furthermore, we will talk about what’s next? And how does this help secure a sustainable growth for AFI?
