Unique ingredients give a recipe its uniqueness

Ingredients can vary not only greatly in origin and production, but also in their function in the final food recipe.
The role an ingredient plays in a recipe varies greatly.
Some act mainly as fillers and can easily be replaced by similar products if conditions such as price or availability make it necessary.
Others are unique and play a crucial role in giving the finished food quality and uniqueness.
They simply cannot be substituted without affecting the consumer's perception of the finished product.
Therefore, the choice of these ingredients places particular demands on the collaboration between a food manufacturer and its supplier, explains ingredient expert Svend Aagaard Nielsen, Product Manager at Procudan.
