Safe water use and reuse in the dairy sector

Freshwater is a limited resource, and pressure on water supplies is growing across Europe. Even in Denmark, more water is already being abstracted on Zealand than is sustainable. Through the International Dairy Federation, we are surveying water use across the global dairy sector and working on guidance for safe water reuse for all dairies in the world and trying to inspire smart and safe ways to use and reuse water. At the same time, the Danish Dairy Board's guidance on water use and reuse is being updated.

We are looking at the risks linked to different water sources, where reused water can be applied, which treatments are needed, and how safety should be monitored and verified. The presentation will give examples of considerations when using and reusing water in food operations (from a dairy perspective) without compromising food safety or compliance with Danish and EU legislation.
