What if you could look beyond the microorganisms, you are able to grow?
Modern DNA-based microbiology can provide a much broader picture of the microbial communities present in food, raw materials, production environments (e.g. salt baths from diaries and hygiene samples) – including microorganisms that traditional methods may miss. But what does this actually mean in practice?
In this talk, we will focus on the practical applications of microbiome profiling in the food industry. How can microbial profiling help identify sources of contamination? Investigate spoilage? Compare raw materials or suppliers? Monitor changes in production environments? Understand microbial communities in process water or salt baths? And perhaps most importantly: how can these insights support faster and better decisions?
Using real-world examples, we will demonstrate how OMNI Track can turn complex microbial data into actionable knowledge – helping food producers understand not just which microorganisms are present, but how microbial communities change and what that may mean for food quality, safety and production. The tool is not just about generating more data. It is about asking better questions – and getting answers that can be used.
